5 Beans with Basil Vinaigrette
1 cup garbanzo beans, cooked
1 cup baby lima beans, cooked
1 cup pink kidney beans, cooked
1 cup pigeon peas or black eye peas, cooked
1 cup sweet peas, cooked
2 tablespoons basil, finely chopped
1 garlic clove, finely minced
2 tablespoons sugar
1/4 teaspoon chili paste
1/4 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup apple cider vinegar
1/2 cup light salad oil
1 teaspoon dry mustard
Place the five beans into a serving bowl. In a mixing bowl combine the basil garlic, sugar chili paste, paprika, salt, black pepper and mustard. Whisk in the salad oil. Pour the mixture over the beans and mix thoroughly. Chill at least 1 hour before serving. Serves 6.
