Marinated Blackeye Peas

1 #300 (15 or 16 oz.) Bush'sŪ Best Blackeye Peas
1 rib celery, chopped
1 tablespoon finely chopped onion
1 tablespoon salad oil
1 tablespoon vinegar
1 tablespoon mayonnaise
1/4 teaspoon salt
Dash cayenne pepper
1 ripe tomato diced


Drain blackeye peas, rinse with cold water and drain well. Add chopped celery and onion.

In a bowl, combine oil, vinegar, mayonnaise, salt and cayenne; mix well. Pour over peas and stir gently. Chill several hours or overnight.

Add diced tomato. Mix carefully and serve immediately.
