Cornbread Salad

1 (8 oz.) box Jiffy® cornbread mix
2 Tbl. Milk
10 slices bacon, cooked
2-3 fresh tomatoes, chopped
1 bell pepper, chopped
1 medium sweet onion, chopped
1/2 cup sweet salad pickles, chopped
sweet pickle juice
1 cup mayonnaise


Cook cornbread according to pkg. directions, but adding additional 2 Tbl. milk.

Place vegetables in a bowl and add sweet pickles.

Combine mayonnaise and enough pickle juice so that you can drizzle the mixture.

In a large bowl, crumble 1/2 cornbread, over this put 1/2 of bacon(crumbled), 1/2 of vegetable mixture, and drizzle with 1/2 of mayo mixture. Repeat, and then enjoy.
