Chicken Salad

3 cups cooked chicken or turkey, cut into bite-sized pieces
1 cup diced celery
2 tablespoons grated onion
3 tablespoons capers, drained
2/3 cup browned, slivered almonds
3 tablespoons tarragon vinegar (or more if you like)
6 stuffed olives, sliced
1 can water chestnuts, sliced
Salt, pepper and paprika, to taste
1 cup mayonnaise
1/3 cup sour cream


Mix all ingredients except mayo and sour cream. Sprinkle with vinegar and seasonings. Let stand at least 1/2 hour longer. Then add the mayo and sour cream mix -- turn out onto a lettuce-lined platter and surround the salad with strawberries, melon slices, pineapple, grapes, etc.
