Chicken Cobb Salad

1 lb. skinless, boneless chicken breasts
2/3 cup plain non-fat yogurt
3 Tbl. mango chutney
2 Tbl. reduced fat mayo
1 Tbl. fresh lemon juice
1/2 tsp. salt
2 apples, 1 Granny Smith and 1 McIntosh
1 rib celery, finely diced
2 Tbl. minced scallion
1 oz. crumbled bleu cheese
12 Leaves of Boston Lettuce


Preheat the broiler.

Place chicken on the broiler rack and broil 4" from heat for 4 minutes per side, or until just cooked through. Transfer chicken to cutting board and cut the chicken into chunks.

In a large bowl, combine yogurt, chutney, mayo, lemon juice, and salt; stir to blend. Add the apples, celery, and scallion. Fold in chicken chunks until well coated.

Arrange lettuce leaves on plate. Spoon chicken salad on top. Sprinkle with bleu cheese. Serve with a dark bread and fresh fruit
