Chicken Ceasar Salad

3 ounces roasted, skinned, boned chicken breast, chopped
2 cups torn romaine lettuce
1 Tbl. grated fresh Parmesan cheese
2 Tbl. white wine vinegar
1 Tbl. water
1 1/2 tsp. olive oil
1 tsp. fresh lemon juice
1/8 tsp. black pepper
1/8 tsp. Dijon mustard
6 fat free ceasar flavored croutons


Combined first 3 ingredients in a bowl and toss gently.

Combine vinegar and next 5 ingredients; stir with a whisk. Add to lettuce mixture; toss well. Top with croutons.
