Cold Cornbread Salad
1 (8 oz.) box Jiffy cornbread mix
7 slices bacon
1 bunch green onions, chopped finely
1 small tomato, chopped finely
3-4 tbsp. mayonnaise
salad greens
Bake cornbread according to package directions; cool. Crumble into a bowl. Fry bacon, cool and crumble over cornbread. Add the onions, tomato and mayonnaise and toss to combine. Refrigerate overnight and serve chilled over salad greens.
