Spicy Cucumber Salad

1 large cucumber
1 teaspoon salt
1 tablespoon soy sauce
1/2 tablespoon vinegar
1/2 teaspoon sugar
2 teaspoon chopped garlic
1/2 teaspoon chili oil or Tabasco sauce
1/2 tablespoon brown bean sauce
1 teaspoon Szechuan peppercorns
1 tablespoon sesame


Peel cucumber and cut in half lengthwise, Remove seeds (if present) and slice into 1/4-inch slices. Sprinkle with salt and set aside for about 1 hour.

Wash cucumber with cold water, drain, and pat dry with paper towels. combine cucumber with soy sauce, vinegar, sugar, garlic, chili oil, brown bean sauce, Szechuan peppercorns, and sesame oil and mix everything thoroughly.

Note: To make chili oil put about a 2/3 cup peanut oil and 1/3 cup sesame oil in a small pan and heat. When hot add 1 tablespoons hot chili flakes and let sizzle a few minutes without letting it burn. Set aside over night. Strain and refrigerate.
