Dressing: Chipotle Vinaigrette

May/June issue of "Cuisine" magazine, 1997:
Chipotle Vinaigrette

2 Tbsp canned chipotle peppers in adobo sauce, minced*
1 Tbsp adobo sauce from can
1 Tbsp brown sugar
1 tsp sugar
1 tsp fresh cilantro, minced
1/4 tsp each salt and pepper
1/4 cup white balsamic vinegar
1/4 cup fresh lime juice
1 cup olive oil


Combine chipotle peppers, sauce, brown sugar, sugar, cilantro, salt and papper in a small bowl. Stir in balsamic vinegar and lime juice. Whisk in olive oil gradually.

*The article recommends removing the seeds from the chipotle peppers.
