Flavored Mayonnaise
Give a boost to nonfat mayonnaise by adding the following flavorings for sandwiches or salads.
1/2 cup mayo and the following:
Dried Tomato Mayonnaise: 6 dried tomatoes packed in oil drained and minced.
Lemon Mayonnaise: l tsp. grated lemon rind and 2 Tbl. fresh lemon juice.
Basil Mayonnaise: 1/2 cup fresh basil leaves chopped.
Mediterranean Mayonnaise: 2 Tbl. chopped fresh parsley, 2 Tbl. minced green onions, 1 Tbl. chopped capers, l tsp. hot sauce.
Onion Mayonnaise: 1/2 cup chopped onion, 3 Tbl. water
Saute onion in a nonstick skillet coated with vegetable cooking spray. Add 3 T water; reduce
heat and simmer 5 minutes. When cool mix with mayonnaise.
Roasted Red Pepper Mayonnaise: 1/4 cup coarsely chopped sweet peppers.
