Dressing: Garlic Dijon Balsamic Vinaigrette

Garlic Dijon Balsamic Vinaigrette

2-3 crushed garlic cloves
pinch Kosher salt
3 TBL. to 1/4 cup Dijon mustard (to taste)
1 1/2 tsp. lemon juice (bottled is OK/fresh is better)
about 1/4 cup Balsamic vinegar
about 1/2 cup olive oil
cracked pepper to taste


Put mustard and salt in container. Mix until salt is dissolved. Add garlic cloves, lemon juice, and Balsamic vinegar. Add olive oil until the dressing emulsifies (mixes together). Add cracked pepper. Shake well before serving. Drizzle on greens. A little goes a long way.
