Salamander's Georgia Pea Salad with Green Goddess Dressing

1 bunch scallions, dark green parts only, coarsely chopped
1 tablespoon chopped fresh tarragon
1 1/2 teaspoons anchovy paste
1 1/2 teaspoons chopped capers
Pepper to taste
3 garlic cloves, minced
1 tablespoon white wine vinegar
1/2 cup mayonnaise
1 cup peas
1 cup trimmed, diagonally halved sugar snap peas
1 cup trimmed, diagonally halved snow peas
1 small Vidalia onion, thinly sliced
Lettuce leaves
Smoked salmon or bacon, optional


In a food processor combine the scallions, tarragon, anchovy paste, capers, pepper, garlic, and vinegar. Process until the greens are finely chopped. Transfer to a bowl and stir in the mayonnaise.

Bring a large pot of water to a boil. Add all the peas and cook for 1 minute. Empty into a colander, cool under cold water, drain well, and transfer to a large bowl.

Add the onion and about 1/2 cup of the dressing and toss to combine.

(Refrigerate the remainder of the dressing for another recipe.)

Serve on lettuce,garnished with salmon or bacon, if desired.

Serves 3 as a main course.
