Cranberry Waldorf Salad

1/3 cup light Mayonnaise
1/3 cup nonfat plain Yogurt
2 Tbsp. Lemon Juice
2 tsp. grated fresh Ginger
2 tsp. ground Cumin
4 Granny Smith Apples
1 large rib Celery, diced
1/2 cup dried Cranberries
1/4 cup Golden Raisins
2 Tbsp. chopped fresh Italian Parsley
1/4 cup chopped Pecans (or Walnuts)


Combine mayonnaise, yogurt, lemon juice, ginger, and cumin.

Core apples and cut into 1/2" dice. Combine with celery, cranberries, raisins and parsley. Add dressing, stirring to coat apples. Cover and refrigerate. Stir in the pecans before serving.

Serves 6-8.
