Fruit: Orange-Almond Salad

Orange-Almond Salad
(from Betty's friend Pauline)

2/3 cup sliced almonds
1/3 cup sugar
8 cups mixed salad greens
1 (15-ounce) can mandarin oranges, drained and chilled
Vinaigrette (recipe below)


Cook almonds and sugar in a large non-stick skillet over medium heat, stirring often, 5 to 7 minutes or until almonds are browned and sugar is melted. Spoon onto waxed paper; cool. Break into small pieces.

Combine the salad greens with the mandarin oranges. Dress the salad with the vinaigrette and garnish with candied almonds.


Vinaigrette:
Prep 5 minutes
Chill 2 hours

2/3 cup olive oil
1/3 cup cider vinegar
1/3 cup sugar
1 Tbl. chopped fresh parsley
1 tsp. salt
1/4 tsp. black pepper
1/4 tsp. dried crushed red pepper


Combine all ingredients in a jar. Cover and shake vigorously. Chill 2 hours.
