Cranberry Fruit Salad

Cranberry Fruit Salad

1 (1-pound) can whole-berry cranberry sauce
1 (8-ounce) can crushed pineapple (packed in juice), drained (Reserve one Tablespoon of the juice)
1 medium Golden Delicous apple, unpeeled, finely chopped
1 large orange, peeled, sectioned, cut into small pieces (Discard white membrane)
2 Tablespoons corsely chopped almonds
1 Tablespoon honey
1/2 teaspoon almond extract
1/4 teaspoon orange extract


In a large bowl, combine cranberry sauce, pineapple, apple, orange and almonds. Mix Well.

In a small bowl or custard cup, combine reserved pineapple juice with remaining ingredients. Mix well, stirring until thoroughly blended. Add to fruit, mixing well. Chill several hours, or overnight, to blend flavors.

Makes 6 servings. Each serving provides 194 calories and 2 grams of fat.
