Pineapple Carrot Salad
3 cups shredded carrots
1 (15 1/2 oz.) can pineapple chunks, drained
1/2 cup raisins
2/3 cup salad dressing
1 cup miniature marshmallows
1/2 cup celery, diced
Combine all ingredients and mix lightly. Chill and serve.
Variations:
Add 1 (11 ounce) can Mandarin oranges -drained.
Add 1 cup coconut in place of the marshmallows and celery.
Substitute 8 oz. sour cream for salad dressing.
