Salad with Orange-Chipotle Dressing

Dressing:
1 Cup Orange Juice, Fresh Squeezed
2 Tbsp Chipotle Peppers, Chopped
3/4 Cup Olive Oil, Portuguese
1 Fl Oz Vinegar, Red Wine
1 1/2 Fl Oz Lime Juice, Fresh Squeezed
1 Tsp Garlic, Fresh, Chopped
1/2 Tbsp Oregano
1 Tbsp Cumin, Ground
Salad:
5 Oz. Romaine Lettuce, 1" Chop
1/2 Cup Granny Smith Apple, Diced
1/4 Cup Roasted Red Pepper, Diced
1 Cup Tortilla, Blue & White, Corn
2 Oz Goat Cheese, Crumbled
For dressing: Place orange juice in a saucepan, bring to a boil and reduce to a 1/4 cup. Place orange juice, chipotles, red vinegar, lime juice, chopped garlic, oregano and cumin in a bowl. Mix well. Slowly whip olive oil into the mixture to form an emulsion. Store in a cool area.
For salad: Place all ingredients into a mixing bowl, except for the goat cheese. Add 2 ozof the orange-chipotle dressing and toss well. Place salad on serving plate, and crumble goat cheese on top.
