Waldorf of Sorts Salad

Dressing:
2 tablespoons lemon juice
2 tablespoons white wine vinegar
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup chicken broth
1/4 cup olive oil

Salad:
Salt
1 pound tender green beans, ends trimmed
2 tart apples (Granny Smith or Macintosh), washed, unpeeled
6 cups mixed salad greens
freshly ground black pepper
1/4 pound grated sharp Cheddar cheese or gorgonzola cheese for topping
1/4 cup coarsely chopped walnuts for topping


Dressing: Combine all ingredients together in a mixing bowl and wish well to blend. (can be made up to one day ahead and kept in fridge).

Beans: Cook beans in boiling salted water for approx 8 minutes until tender. Put in ice water to stop cooking. Drain well and pat dry. If made the day before, wrap in kitchen towel and then plastic wrap.

Salad: Halve and core apples, do not peel. Slice into think wedges. Place apples into bowl and toss with dressing. Marinate for 10 minutes. Add beans and greens and mix well. Season with salt and pepper. Arrange on plates, add apples and sprinkle with dressing. Sprinkle with cheese and walnuts.
