Gelatin: Lemon Cheddar Salad

Lemon Cheddar Salad
from Company's Coming Salads by Jean Pare.


1 (3 oz.) package lemon-flavored gelatin
1 cup boiling water
14 oz. can crushed pineapple and juice
1 cup whipping cream
1 cup grated cheddar cheese


Combine gelatin and boiling water in bowl. Stir to dissolve. Stir in crushed pineapple and juice. Chill until of egg white consistency.

Whip cream until stiff. Fold into thickened jelly. Fold in grated cheese. Pour into your prettiest bowl. Chill.

Garnish with orange slices if desired.

Serves 10.

Variation: Add 1 cup small marshmallows with whipped cream and grated cheese.
