Hot German Potato Salad

5 pounds of boiling potatoes
1 pound bacon, cut into 1 inch pieces, fried crisp, reserve 3 tbl. of the bacon grease
6 eggs, hard boiled
1 cup of celery, thinly sliced
1 cup sugar
1/2 to 1 cup cider vinegar (adjust to your taste)
2 Tbls. country mustard (whole grain)


Peel the potatoes, cut into large bite-size chunks. To save time (and pans) I just throw the eggs in with the potatoes and boil them together. Boil potatos until fork tender. Drain well and return to the cooking pot to stay hot. Peel the eggs, keeping them as hot as you can and chop into pieces. Put these in with the potatoes.

While potatoes are boiling, fry up your bacon and get your other ingredients ready. Remove the crisp bacon from the skillet to paper towels. Save the pan drippings and 3 Tbls. grease.

To the pan drippings and reserved grease add the celery and cook it only slightly. Don't let it go limp. Then add in the sugar, vinegar and mustard. Mix well in the skillet, taste and adjust as needed. It will seem like a lot of dressing for the potatoes, but you are adding it hot to the hot potatoes and they will absorb a lot.

Pour the completed dressing over the cooked potatoes and eggs and mix well.

Serve hot. This is just not very good cold or even re-warmed. The bacon gets limp and you lose the wonderful crunch from it and the celery.
