German Potato Salad
5 lbs. red potatoes
1 lb. bacon
1 onion, diced
1/3 cup flour
1/4 cup fresh parsley, chopped
1/2 cup water
1/2 cup cider vinegar
2 tbs. sugar
3/4 tsp. salt
pepper to taste
Preheat oven to 350° F.
Cook potatoes in boiling water 45 minutes, peel and slice.
Fry bacon; reserve drippings.
Saute onion in 2 tbls. bacon grease.
Add to potatoes with crumbled bacon and parsley; mix.
Add flour to remaining bacon grease and stir well. Stir in remaining ingredients. When thickened, mix well with potato mixture.
Bake for 45 minutes.
