Barley - Broccoli Salad
1 Cup water
1/8 tsp. salt
1/2 Cup barley
1 Cup coarsely chopped fresh broccoli
1/3 Cup oil free or reg. Italian dressing
1 1/4 Cups chopped tomatoes
1/4 Cup shredded carrot
2 TBS. diced onion (more or less to taste)
2 TBS. diced green pepper
Bring water and salt to boil in a medium saucepan; add barley, and cover.
Reduce heat and simmer for 15 minutes or until barley is tender and water is absorbed.
Combine broccoli and dressing.
Add barley, tomatoes and next 4 ingredients, toss gently.
Cover and chill at least 30 minutes.
Serve on lettuce (opt).
128 cal. per 3/4 cup salad with 1/2 cup lettuce.
