Artichoke Orzo Salad

1/2 pound orzo
1 Tbl. plus 1/4 tsp. salt or to taste
1 Tbl. lemon juice
1 (9 1/2 oz.) can artichokes
1 Roma tomato, chopped and seeded
2 Tbl. chopped fresh basil,fresh parsley, or green onions (green part only)
1 cup bite sized pieces grilled or roasted chicken, or roasted vegetables
2 Tbl. olive oil
1 Tbl. lemon juice
1/4 tsp. black pepper


Bring a large potful of water to boil. Add 1 Tbl. salt and the pasta. Cook just until the pasta is tender, about 8-10 minutes. Drain well and place in large bowl.

Drain the rinsed artichoke hearts. Chop coarsely and add to the pasta, along with the tomato, add the basil, parlsey, or green onions as desired and the chicken or roasted vegetables. Toss to distribute the ingredients evenly.

Stir together the olive oil, lemon juice, 1/4 tsp. salt and pepper to taste. Pour over the pasta and toss to coat well.
