Famous Ziti Salad
1 tablespoon salt
2 tablespoon oil
1 box (16 oz.) ziti
1/4 cup milk
1 red onion, cut into 1/4 inch pieces
2 tomatoes, cut into 1/4 inch pieces
2 small green peppers, seeded, cut into 1/4 inch pieces
6 sweet pickles, diced
1 large shallot, minced
1/2 cup sour cream
1 1/2 cup mayonnaise
2 packets beef bouillon
1 teaspoon red wine vinegar
1 tablespoon pickle juice
1/4 cup chopped fresh dill
salt and pepper to taste
Heat 4 quarts of water to boiling; add salt and oil. Stir in ziti. Return to boiling, boil til ziti is just tender, stirring occasionally, about 10 minutes. Rinse under cold running water until cool, drain.
Place ziti in a large bowl. Sprinkle with just enough milk to moisten, about 1/4 cup. Reserve a small amount of each vegetable for garnish. Combine remaining onion, tomatos, green peppers, pickles and the shallot with the ziti. Toss well.
In a medium bowl, combine the sour cream with the mayonnaise, bouillon, vinegar, pickle juice and 1/4 cip dill. Pour over ziti vegetable mix. Toss well, Add salt and pepper to taste. Serve chilled, garnished with reserved vegetables.
