Green Pea Salad

2 (16 oz.) pkg. green peas -- drained
1 bunch green onions -- diced
3 hard-boiled eggs -- chopped
1/2 cup sweet pickles -- diced
1 small jar pimentos -- drained
1 cup cheese -- cut into 1/2 inch cubes
1/2 cup mayonnaise or more to taste
salt and pepper to taste


Drain peas well, wash and dice green onions. Boil eggs; cool and chop. Dice sweet or dill pickles; cut cheese in cubes. In a large bowl, mix everything and refrigerate until ready to serve. Ham may be added if you wish.
