Mediterranean Garlic Potato Salad
8 russet potatoes, boiled, cooled, peeled and cut into 1/4 inch slices
3/4 cup olive oil, divided
6 cloves garlic, minced
4 shallots, thinly sliced
4 scallions, finely chopped
salt and pepper to taste
1/2 cup Italian parsley, finely chopped
4 tablespoons lemon juice
Toss sliced cooked potatoes with scallions and shallots.
In a small saucepan, gently heat 1/4 cup olive oil and garlic for a few minutes. Do
not brown. Remove from heat and cool slightly. Whisk in remaining olive oil, lemon
juice, parsley, salt and pepper.
Pour over potatoes and toss. Serve at room temperature.
