Potato: Mom's Potato Salad

Mom's Potato Salad

2 lbs. good, firm cooking potatoes
5 oz. sliced bacon
beef broth
pickled cucumber
hard cooked eggs if desired


Cook or bake potatoes (baking is good if you don't want to stay in the kitchen). Peel and slice while still warm. Fry bacon and drain on paper towels. Chop cucumber and eggs finely. Mix everything (potatoes should still be warm) together, adding salt, pepper, 2 tsp. or so mustard and about one cup broth.

If you have leftover potatoes just make it with cold ones but heat the broth.
