Potato Salad
3 medium potatoes
1/2 cup mayonnaise
2 Tbsp. cider vinegar
1 Tbsp. prepared spicy brown mustard
1 1/4 tsp. salt
1/2 tsp. caraway seed
1 cup cooked peas
1/2 cup shredded carrots
2 Tbsp. chopped parsley
1 Tbsp. chopped red onion
In large saucepan of boiling salted water, cook potatoes until done. Drain and set aside. In small bowl, stir together mayonnaise, vinegar, mustard, caraway seed, salt and pepper. Set aside.
Peel potatoes and cut into 1/2-inch cubes. Place in large plastic bowl with lid. Add peas, carrots, parsley and onion. Pour dressing and toss well to coat thoroughly. Cover and pack in cooler or refrigerator.
Potato Salad

3 hard-boiled eggs
1 pkg. frozen green peas
1/2 cucumber, chopped
1/2 bunch green onions, chopped
1 can black olives
1 to 2 cup mayonnaise
salt and pepper
Boil potatoes and carrots until tender. Cook peas and add along with the eggs (chopped). Add cucumber, onion and olives. Add mayonnaise to desired consistency and spices to taste.
