Potato Salad
2 1/2 lbs red potatoes, cooked and cut up
1 cup celery
1 cup chopped red onion
salt, pepper and paprika
Dressing:
2 eggs, beaten slightly
1/3 cup vinegar
1/3 cup sugar
1 tsp Dijon mustard
1 tsp salt
1/4 tsp or more pepper
Combine dressing ingredients in a saucepan. Cook over low heat, stir until thick like custard. Add 1/2 cup mayonnaise. Pour over potatoes, onions and celery, etc. Add 1/2 tsp celery seed and some chopped chives (optional). Chill.
