Caesar Potato Salad

2 tablespoons lemon juice
1 teaspoon Worcestershire sauce
1 1/2 teaspoons Dijon mustard
1 teaspoon anchovy paste
1 garlic clove, pressed
Salt and pepper to taste
3 tablespoons olive oil
1/3 cup mayonnaise
3 tablespoons grated Parmesan cheese
6 medium unpeeled potatoes, cut in about 1/2-inch cubes (about 6 cups)
1 cup diced cucumber
3/4 cup sliced radishes
1/3 cup thinly sliced scallions
Romaine lettuce, optional


In a medium bowl whisk the lemon juice, Worcestershire sauce, mustard, anchovy paste, garlic, salt, and pepper. Gradually whisk in the oil. Add the mayonnaise and Parmesan, and whisk until evenly blended.

Place the potatoes in a large pot and cover with cold water. Cover the pot and bring to a boil, then reduce the heat and boil gently for 8 to 9 minutes, or until the potatoes are tender. Drain well and transfer to a large bowl.

Add the dressing and mix gently to coat. Add the cucumber, radishes, and scallions, and mix gently. Serve on romaine lettuce, if desired.

Serves 6.
