Mucho Spanish Potato Salad

1/4 cup sherry vinegar
1 tsp. honey
Juice of 1 lime
Pinch of saffron (optional)
1 cup mayonnaise
1 tbsp. minced garlic
2 tsp. Cajun seasoning
1 tsp. chili powder
1 tsp. adobo seasoning
2 tsp. ground cumin
2 tsp. Mexican oregano
2 lb. new potatoes
1 tomato, large, chopped coarse
1/2 cup finely diced Spanish onion
1 tbsp. fine chopped fresh thyme or 1 tsp. dried
1/4 cup cilantro, coarsely chopped


Combine vinegar, honey, lime juice, and saffron in a pot and bring to a boil and immediately remove from heat. Let sit till room temperature.

Combine mayonnaise, garlic, saffron mixture and spices in a bowl and season with salt and pepper to taste.

Cook potatoes in large pot with salted water until tender. Drain and slice about 1/2 inch thick. Put in a bowl and immediately fold the mayonnaise mixture, tomato, onion, thyme and cilantro into the potatoes. Tastes better after a day in the fridge.
