Potato Salad Vinaigrette

  Potato Salad Vinaigrette 

  1 1\2 pounds small, new potatoes, washed & quartered 
  1/4 cup vegetable oil 
  1/4 cup vinegar 
  salt and pepper to taste 
  1/2 pound bacon, cooked until crisp, drained, crumbled 
  3 eggs, hard boiled & chopped 
  1 onion grated 
  1 bunch of scallions, chopped 
  2 Tbl. sweet pickle relish 


Bring a pot of salted water to a boil and add potatoes.  Cook until just tender, 
about 15 minutes.  Be careful not to overcook, potatoes can
become mushy.  Drain the water and transfer to large bowl.  Using a knife
and fork, roughly cut potatoes in bite-size pieces.

In a small bowl, whisk in the oil and vinegar and add the salt and pepper. 
Pour the mixture over potatoes and toss.  Let potatoe salad sit 30 minutes.
Add bacon, eggs, onion, scallions, and relish, tossing gently until well

Serves 6
