Potato: Southwest Potato Salad by pepe

Southwest Potato Salad

4 lbs small red potatoes
salt
3 Tbsp olive oil
2 tsp cumin seeds
1 Tbsp minced jalapeņo
1/2 tsp minced garlic
1/4 cup fresh lime juice
1 tsp grated lime peel
1/2 tsp freshly ground pepper
1 pkg (8 oz) sour cream
1/2 cup plain low fat yogurt
1/2 cup finely chopped red onion
1/4 cup chopped fresh parsley


Cook potatoes in boiling salted water, boil until tender 15 to 20 minutes. Drain.

Meanwhile, heat oil in small saucepan over medium heat. Add cumin seeds and cook until fragrant, 30 seconds. Remove from heat and stir in jalapeno and garlic. Whisk in lime juice and peel, 2 teaspoons salt and pepper. Transfer to large bowl. Slice warm potatoes 1/2 inch thick and toss with dressing, cool. Stir in remaining ingredients.
