Chefshell's Far East Westernized Rice Salad

3 cups cooked rice
1/2 cup blanched tender, broccoli florets, or broccolini
1 bunch scallions (white and green parts), cut 1/2 inch pieces
1/2 cup snow peas, blanched, tender cut into strips
2 carrots, blanched, tender,thin rounds or julienned
1 red Asian chili pepper or jalapeno, diced fine (optional)
1/2 cup cilantro, chopped
1/2 cup asparagus, blanched, tender,cut into 1/2 inch pieces
1 red, orange, or yellow bell pepper, cut into strips
1 clove minced, fresh garlic

Dressing:

1/3 cup lime juice, fresh squeezed
1/4 cup mandarin or regular orange juice (fresh)
1/3 cup vegetable or peanut oil
1 tsp. hot chili oil
1 tsp. toasted sesame oil
1 tbsp. rice vinegar
3 tbsp. soy sauce
1 tsp. minced ginger (fresh)
1 tsp. hoisin sauce or honey
salt, pepper, and red pepper flakes to taste
Chopped cashews or peanuts for garnish


Combine all salad ingredients in a large bowl. Whisk together all dressing ingredients. Pour dressing over salad and toss to combine.
