Rice Salad

Rice:
1/3 cup green split peas, soaked overnight in 1 1/2 cups water
1 cup long grain rice
1 Tbsp. vegetable oil
1-3 tsp. curry powder or to taste
salt
2 1/2 cups liquid (see recipe)

Dressing:
2 Tbsp. vegetable oil
2 Tbsp. cider or white vinegar
1 1/2 tsp. lemon juice
1 Tbsp. honey
1/4-1/2 cup raisins


Rice: Saute rice in hot oil. Add curry and continue sauteing until fragrant. Add split peas, salt and liquid (drain any leftover water from split peas into measuring cup and add water to make 2 1/2 cups). Bring to a boil, cover and barely simmer until all the liquid is absorbed.

Dressing: Combine all dressing ingredients in a small pan and simmer until the raisins are plump. May need to add some water to keep the mixture going. Pour the hot dressing over the warm rice. Mix, chill until ready to serve.
