Rice: Seafood Rice Salad

Seafood Rice Salad

1/2 pound cooked bay shrimp
6 1/2 ounce can albacore, drained and flaked
3 cups cooked and chilled brown rice
1/2 cup onion, chopped
1 1/2 cups celery, chopped
1/4 cup pimiento, chopped
1 tablespoon fresh lemon juice
1 cup mayonnaise
1/2 cup sweet pickles, chopped


Combine everything in a large bowl. Toss and chill. Serve on salad greens. Garnish with tomato wedges.

Serves 8.
