Spanish Rice Salad

2 cups chilled rice* (cooked in chicken broth)
4 tomatoes -- quartered
1 cup chopped bell peppers
1 cup chopped celery
1/4 cup chopped onion
1/4 cup chopped pimiento
3 tablespoons white wine
1 Pinch cumin
2 teaspoons mixed Italian seasoning
Salt and pepper to taste


Combine all ingredients; toss together and serve. Serves 8 (80 calories per serving)

NOTES : Pre-cook rice in chicken broth, then chill before using in this recipe.
