Seafood: Summer Shrimp Salad

Summer Shrimp Salad
serves 4-6

1 lb. cooked, cleaned and deveined shrimp
1 cup cucumber, diced to 1/2" cubes
2 green onions chopped
1 tomato, diced
1 teaspoon Dijon mustard
1 teaspoon dried dill weed
1/2 teaspoon crushed garlic
1/2 teaspoon salt
1 cup sour cream
1/2 cup mayonnaise
1 head romaine lettuce, cleaned, washed, dried and torn into small pieces


In a large bowl mix shrimp, cucumber, onions, tomato, mustard, dill, garlic, salt, sour cream, and mayonnaise. Mix with romaine lettuce. Refrigerate for 1 hour. Serve.
