Asian Slaw
1/2 head green or red cabbage -- cored, outer leaves removed, finely shredded
1 tbsp. salt
1 c. rice vinegar
1 c. sugar
2 T. peeled fresh ginger -- chopped
1 t. red pepper flakes
1 c. finely shredded peeled carrots
Mix cabbage and salt. Place plate on top of cabbage, and weight with heavy cans or bag of flour. Let drain 2-3 hours.
Whisk together vinegar, sugar, ginger, and pepper flakes.
Rinse and drain cabbage, add to the vinegar mixture with 1 c. finely shredded peeled carrots. Toss and refrigerate for at least 8 hours, and up to 24 hrs. Serve cold, garnished with cilantro.
