Gingered Cole Slaw

1/2 green cabbage -- cored and shredded
1/2 red cabbage -- cored and shredded
2 carrots -- peeled and julienne
1/4 cup green pepper -- chopped
1/4 cup red pepper -- chopped
1/4 cup yellow pepper -- chopped
1 bunch green onions -- chopped

Dressing:
1/4 cup sugar
1/4 cup vegetable oil
1/4 cup rice wine vinegar
2 tsp. dry mustard
2 1/2 tsp. fresh ginger -- chopped


Combine vegetables in a large bowl. Whisk dressing ingredients together and toss with the vegetables until coated. Season with salt and pepper.
