Spinach Salad

1/2 lb. Fresh spinach, well rinsed 
4 Strips of bacon, drained and cooled 
3 Green onions, sliced 
5 Mushrooms, sliced thin 
1/4 cup Olive oil 
2 Tbl. Fresh squeezed lemon juice 
1 cloves Garlic, minced 
1/2 tsp. Salt 
1/4 tsp. Dry mustard 
1/8 tsp. Freshly ground black pepper 
1/4 cup Freshly grated Parmesan Cheese, optional 


Cook bacon til crisp and drain; set aside. 

Rinse spinach well and spin dry. Trim spinach well and spin dry.  Add 
onions, bacon, and mushrooms.

Combine olive oil, garlic, lemon juice, salt, pepper, and mustard in a 
small jar with tight fitting lid; shake well.  Pour over salad and toss
well just before serving.

Sprinkle with Parmesan cheese, if desired.
