posted by Janet B 06-21-98 12:50 PM Spinach Salad 1 pound fresh, raw spinach 4-6 slices bacon, cooked crisp, drained and crumbled 2 hard cooked eggs, chopped 1 small sweet onion, chopped Dutch dressing (recipe follows) Wash spinach thoroughly. Drain and dry with paper towels. Chill to crisp. Use whole leaves or tear up. Combine in salad bowl with crumbled bacon, chopped egg and onion. Pass Dutch Dressing. Dutch Dressing: 1/2 cup vegetable oil 2 Tbl. cider or wine vinegar 2 Tbl. sugar 1 tsp. grated onion 1/4 tsp. dry mustard 1/2 tsp. salt Combine ingredients in blender or mixer bowl. Blend or mix until thick and syrupy and sugar is dissolved. Dressing will separate after a while.
