Hot Bacon Dressing

Hot Bacon Dressing 

6 slices bacon, diced 
3 tsp. brown sugar 
1/2 Cup sliced green onions 
1/4 tsp. salt 
1 1/2 tsp. vinegar 
1/8 tsp. dry mustard 
Dash of paprika 


Cook bacon until crisp. Add remaining ingredients.  Bring to a boil and remove from heat.  Serve immediately.

Add remaining ingredients. 



Bacon Dressing(Makes 1 cup): 

1/4 cup wine vinegar 
1/2 cup vegetable oil 
2 tsp. Dijon mustard 
2 tsp. brown sugar 
1 tsp. salt 
Few drops of Tabasco 
4 slices crisp-cooked bacon, crumbled 
2 tbsp. sliced green scallions 


Whisk first 6 ingredients until thoroughly blended.  Stir in bacon and scallions; cover and chill several hours or 
overnight.  Mix thoroughly before serving over greens.

Especially good over washed, trimmed  spinach leaves and mashed hard-boiled egg, sliced mushrooms and croutons, 
sprinkled over spinach.
