Sweet and Sour Cabbage
1/2 small head of cabbage, finely chopped
1/2 small carrot, julienne cut
1/2 tsp. salt
2 Tablespoons sugar
1/2 white vinegar
2 Tablespoons Orange Marmalade Jam
Place cabbage and carrot and salt in a large plastic container. Place lid on top and shake well. Set bowl aside until cabbage is tender. It will take about 30 minutes.
Add sugar and vinegar and replace lid and shake well. Set bowl aside until sugar is dissolved.
About another 15 minutes.
Add marmalade jam; mix well. Refrigerate until ready to serve.
Serves 6.
