Mozzarella and Beefsteak Tomatoes with Onions

8 (1-oz.) slices mozzarella
8 (1/2-inch) slices beef steak tomatoes
8 pieces red onion, thinly sliced
Basil leaves and grilled crusty bread to garnish
Kosher salt and cracked pepper to taste
Basil Vinaigrette
Alternate the tomatoes, cheese and onions on dinner plate in a shingle pattern. Add salt and pepper to taste. Spoon the vinaigrette over the perimeter of plate. Garnish with basil leaves and grilled crusty bread.
Basil Vinaigrette
Chef: Jeffrey Beeson -Restaurant: Different Pointe of View
1/4 cup red wine vinegar
1 Tbsp. garlic, chopped
1 tsp. shallots, chopped
2 Tbsp. basil leaves
1 tsp. lemon juice
1 tsp. honey
1/2 cup olive oil
Kosher salt, cracked pepper and jalapeņo Tabasco to taste
Puree all ingredients, except oil, until smooth. Slowly add the oil until it thickens. Season to taste.
