Cucumber JelloŽ Salad
1 cucumber, shredded
4 green onions, sliced
1 (3 oz.) pkg. lime JelloŽ
1 (3 oz.) pkg. cream cheese
1 cup mayonnaise (not low-fat)
1 tbl. grated horseradish
2 tbl. lemon juice
Combine cucumber and green onions in collander and allow to drain while preparing Jello.
Dissolve Jello in 1 cup boiling water.
Combine hot Jello mix with cream cheese and mayonnaise, horseradish(drained) and 2 Tbsp. lemon juice. Whisk or beat with electric mixer until smooth.
Chill until the consistency of lightly beaten egg whites.
Fold drained cucumber and Jello base together and pour into mold that has been coated with non-stick cooking spray. Chill until set.
