Cucumber Salad
1 tablespoon butter
1 onion chopped
3 teaspoons minced green pepper
2 teaspoons ginger
salt to taste
1 cup yoghurt
1 cucumber peeled and finely chopped
Melt butter in saucepan. Add onion, green pepper, ginger, sugar and salt to taste. Cook over low heat until onion is tender; remove from heat. Stir in yoghurt and cucumber. Chill for 1 hour.
Yield 2 to 3 servings.
Cucumber and Yoghurt
1 cucumber peeled
1/2 teaspoon salt
1 1/2 cups yoghurt
paprika
black pepper
Grate cucumber and add salt. Let stand for several hours. Drain and press out liquid.
Fold cucumber into yoghurt and sprinkle with paprika and pepper.
Yield 2 to 3 servings.
