Green Salad with Hot Bacon Dressing
2 heads Boston lettuce
12 radishes, thinly slice
10 slices bacon
2 teaspoons sugar
1/2 cup red wine vinegar
1/2 teaspoon horseradish
1/4 teaspoon pepper
12 scallions, including tops, chopped
1 egg yolk, boiled and grated
Early in day, wash, dry, tear and crisp lettuce. Prior to serving, add radished and allow to remain in refrigerator.
Prepare dressing.
Fry bacon until crisp, drain and crumble. Add sugar, vinegar, horseradish and pepper to the bacon fat in the skillet. Mix and add scallions and heat until bubbling. Pour immediately over lettuce and toss. Top with bacon and egg yolk. Serve immediately.
Serves 8.
