Minted Onions
2 cups thinly sliced onions
ice water
2 tablespoon fresh mint, chopped
1 cup apple cider vinegar
2/3 cup sugar
Cover the sliced onions with ice water, soak overnight, drain add the chopped mint, vinegar, and sugar.
Stir well until sugar has dissolved. Serve, divided on lettuce leaves or serve in a tossed green salad.
