Roasted Corn Salad
4 ears of corn, husked
1/2 cup corn oil, divided
1 cup prepared barbecue sauce
1 red bell pepper, diced
1 green bell pepper, diced
1 red onion, diced
2 TBSP. fresh lime juice
1 1/2 tsp. chopped garlic
2 TBSP. balsamic vinegar
1 bunch fresh cilantro, chopped
Prepare hot indirect-heat fire in grill; oil grill rack.
Rub corn with corn oil and place on grill.
Baste corn with 1/4 cup barbecue sauce and turn continuously to avoid burning.
Remove corn and let cool.
In large bowl, combine red and green bell peppers, onion, lime juice and garlic.
Cut corn from ears and toss with bell pepper mixture.
In small bowl, stir together remaining 1/4 cup corn oil, balsamic vinegar, cilantro, and 3/4 cup barbecue sauce; mix well.
Add to corn mixture and toss well.
Cover and chill well before serving.
